Blueberry Protein Muffins


  • 5 egg whites
  • ¾ c oats
  • ½ c vanilla lowfat yogurt
  • 1 serving Lean Shake™ 25 French Vanilla powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ c blueberries (or berry of choice)

Directions: Preheat oven to 350 degrees. Blend all ingredients together except blueberries and blend until well incorporated. Line muffin tin with baking cups. Fill each tin about ¾ full.  Then add blueberries, evenly distributing them among muffin tins. Bake for ~12-15 minutes or until slightly golden.  Allow muffins to cool and remove from tin.  Enjoy!

Yield: 12 muffins
